Let's Taco 'bout that sweet corn!
It’s hard to get enough sweet corn when it’s in season. We love it raw, steamed, boiled, or grilled. At Chaia, we lightly char the kernels in a cast-iron pan, then toss with spicy, fresh jalapeño and pair with queso fresco, cilantro-lime crema, and Sungold tomatoes with fresh basil. All of this is wrapped into one of our hot-off-the-griddle housemade corn tortillas.
Our credo is that it’s the simple things in life worth celebrating, like friends, family, and good food. An at-home recipe that we prepare often is made with the simplest version of corn: raw. We toss the just-cut kernels with diced nectarines, ripe avocados, edamame (frozen), minced jalapeño, cilantro, and fresh lime juice - then season with salt - to make a sublime salad.
Tip to Dekernelling a Corn Cob:
With one hand, stand the corn cob in a large bowl. Using a chef’s knife, cut straight down to remove the kernels. They will fall nicely into your bowl - rather than onto the floor!
