Let's Taco 'bout Carrot Season
Ah, carrots! Bright, extravagant, colorful - and often overlooked. They are a kitchen staple, of course, and many chefs and home cooks use them in multiple dishes on the simple basis that carrots add sweetness. These root vegetables can shine all on their own or take center stage. Here’s a tip for making a super simple carrot recipe at home:
Homemade Carrot Hummus: roast some carrots with a little salt. Then blend them in your food processor with tahini, a pinch of sugar, a bit of cumin (adds a lovely, nutty smokiness), a sprinkling of paprika, and a little water. You’ll get a lovely dish that is equally great as a dip or as a layer in your lunchtime sandwich or salad.
