Let's Taco 'Bout Defying Categories 

As this year comes to an end, we are thinking about our goals for next year and key takeaways from this year:

When we founded Chaia, we stayed away from calling ourselves vegetarian or vegan because we believed that everyone could enjoy our food, not just those who identified with those categories. We did not want to be like other vegetarian restaurants that tried hard to make vegetables taste like something else, nor did we aim to replicate meat. Instead, we reinvented the meatless menu by making seasonal vegetables the focus and insisting that our tacos and food taste so delicious that diners would not miss the meat.  

As we end this year, our reach and recognition have grown. We have defied the vegetarian and vegan categories, and we are solidly a top pick for carnivores and all people who like good food.
