It's Asparagus Season

It's Asparagus Season

We talk a lot about the merits of eating fruits and vegetables that are available seasonally and grown locally, to reduce your carbon footprint, to support our regional farm communities, and for taste. We would argue that there are at least two crops where locally-grown, spring produce truly shines. These include strawberries (which have so much better taste and texture if picked close to home) and asparagus (which is quickly perishable after harvesting).

Springtime brings the warmth that these sturdy green stalks need to begin popping out of the ground. After the weather brings on the initial 70-degree days, farmers will begin to harvest them at 7-9" for market. Asparagus season in our region generally lasts from mid-April to early June, so make certain to try our all-new Roasted Asparagus & Edamame Taco - with ricotta salata, lemon hummus puree, white truffle hot sauce and pickled red onions - while it lasts.
