Let’s Taco ‘bout Infusing Oil

Because vegetables do not naturally contain fat, one of the best ways to add richness or to finish a dish is with a drizzle of infused oil. Using infused oils in vegetable-forward cooking is one of our favorite techniques at Chaia - and at home, too - how many times do you chop or crush garlic to cook in olive oil? Here is a simple technique that we use to make:

GARLIC OIL

Add 12 cloves of garlic, peeled and smashed, and 2 cups of extra-virgin olive oil to a small stainless steel pan. Gently heat the oil over medium heat until the olive oil bubbles. Turn off the heat and let the oil sit until it completely cools. The heat of the oil will turn the garlic a golden color. Pour the oil through a fine mesh strainer to remove the garlic cloves and store it in an airtight container for up to one month in the refrigerator. 

The result is a delicious garlicky oil that can be used for roasting, drizzling, or dipping with just about anything!
