LET'S TACO 'BOUT ZUCCHINI BEST PRACTICES

The summer squashes are here until late fall when the hard-skin winter varieties take over. Their colors are fantastic - golden yellow, green, striped, speckled, and even pure white - and their shapes vary from the well-known long zucchini to small, pie-like pattypans. Their charm is that they can be prepared in so many ways without much prep, and their flavor is not overwhelming. Their challenge is that they are often dismissed because of their subtle flavor and high water density (they are 90 percent water).   

Tip: You can extract the water by slicing and salting them first and letting them sit in a colander to remove some excess moisture, but you will need to pat them dry before cooking.

This favorite home recipe for a Quick Zucchini Sauté is the inspiration for our smoky zucchini taco with goat cheese, chipotle yogurt & fresh mint. The zucchini is cut into simple matchsticks and quickly sautéed until it just glistens. It could not be any easier.

As FRESHFARM celebrates its 25th anniversary, we are delighted to have the opportunity to work with them again, not as a vendor this time but as a partner in their Pop Up Food Hub program, their hyper-local distribution system in which FRESHFARM places orders with farmers, aggregates the food at markets, and then distribute it to eaters via its CSA-style program or deliver it to community-based organizations serving vulnerable residents.

We have always been interested in finding ways to support local farmers and farmer's markets. FRESHFARM's Pop Up Food Hub program allows us to directly place larger orders with the farmers to diversify and boost their sales.  We love that the food hub program gives the farmers a source of income even before setting up their tables for the day and helps us achieve our goal of sourcing as much local food as possible. What's more, the Food Hub improves food access for underserved communities traditionally excluded from the local food system because they don't have enough buying power.

We are excited to be the Food Hub's first restaurant client and are proud that our orders are directly supporting local growers and improving food access in our region!
