We recognize that, compared to meat, vegetables take a bit of work to turn into an entrée-worthy dish. So it does help to have a little strategy. When we founded Chaia, the starting point was taking seasonal vegetables and adding one everyday staple. For us, it was the corn tortilla. However, the strategy can apply to anything for your own weekday cooking:
